This chicken zucchini taco recipe is my go-to recipe for a healthier lunch and quick dinner. I love to whip this up in the beginning of the week because it’s quick, easy, healthy and delicious. It's packed with veggies and my family loves it! It's totally great for leftovers, I just skip the tortilla and just eat it out of a bowl with some Mexican cheese sprinkled on top.

Im not gunna lie, when I first read this recipe, I was like, really…. a boxed meal…. with some added veggies and meats…….…. and this is in a “cookbook”?? This recipe is basically on the side of the Zatarain’s box. My food-prissy self hasn’t cooked a meal with pre-made boxed ingredients in quite some time. But ya’ll... it’s goooooood. And easy! Honestly, it’s a win, win! Sorry I doubted you Jessie.. This meal really is DELISH!

THIS. COBB. SALAD. Holy nutcrackers, this salad is amazing. How can a SALAD be so good?? I know, I thought the same thing. But gosh darn it, it is amazing. The combo of the seasoning on the chicken and the unbelievable dressing, makes it for a match made in heaven.
